Healthy start!

What better place to start than with my easy version of chilli mussels.


Chili mussels are so easy and a really nutritious entree or main. I made the sauce in the Thermomix – onion, garlic and chilli sautéed for 3 mins on speed 2, add 5 tomatoes, home made vegetable stock and simmer for 10 mins, varoma, speed 3, add mussels (already cooked and shucked), varoma, reverse, stir, 2 mins to heat. Garnish with fresh basil and parsley and serve with some delicious thermomix made bread.
