Prawn curry with Rice - one pot meal!



My prawn curry, kind of a tandoori style sauce with rice. We had it for dinner tonight, kids loved the rice!

2 onions, 3 garlic cloves, 2 small dried chillis, 2cm ginger, 5 tomatoes into bowl, chop 3 seconds on speed 6. Scrape down sides.

Add 10ml oil, sauté 3 min on speed 2, temp 100.

Add 1T tomato paste, 2t tumeric, 3t cumin, 2t ground coriander, 1t TMX garam marsala, 4 cardamon pods, 2 cloves and 100ml water.

Pour 200g rice into your steamer basket and rinse. Put basket into bowl.

Into Varoma place 500g peeled raw prawns.

Cook 22 minutes, speed 2, Varoma.

Once done, take out rice basket and pour 20ml cream into bowl. Turn slowly to speed 9 for 1 minute.

Serve prawns on rice and pour over sauce, garnish with coriander.

Cheese and bacon pull apart and scrolls

DD loved these, and how handy are they for after school or lunch boxes!


put 300g warm water and a sachet of yeast into jug and tip 520g bakers flour on top. Add a pinch of salt and sugar along with 20g oil. Mis on speed 4 for 5 seconds. Knead for 2 minutes. Remove from jug and leave it to rise in your thermomat or an oiled bowl covered with a tea towel. Once it's doubled in size, roll out in two lots. Each square should be about 20cm x 30cm. Cover this with your toppings, limited only by your imagination with this one!

Cut into 2cm lengths then concertina the lengths, like you're making a fan. I press my toppings into the dough otherwise it goes everywhere.  Place them cut side up next to each other in a cake tin and bake for about 30 minutes on 200 degrees.  Watch it carefully towards the end and sprinkle more cheese on top if you like.  Makes about twice the size as a Bakers Delight pull apart for half the cost. Nice work, Thermomix.

And the sauce.... with steak.... mmmmm

DH loves this. And again with the figs, he is lucky that some figs even made it home. They are just yummy this time of year and where we live they are for sale at road side fruit and veggie stalls.  I want to plant a fig tree in the new house!

New demo menu!

We have a new menu for our basic demos! I won't give away the recipe but here's a pic of the salmon, sooooo nice!  I have been making the sauce on it's own and using it for everything from eggs benedict to steak.




Smoked Salmon Quiche

Chop 2 spring onions and a garlic clove, speed 6 for 4 seconds. Add 8 eggs, salt and pepper to taste and a dash of milk and stir for 5 seconds on speed 4. Pour into a round silicone mould that fits in your varoma and add some sliced cherry tomatoes, then steam for 20 minutes.  You could also cook this in the oven, add cheese, herbs, ham, whatever you like, or use small silicone cup cake moulds for individual quiches.  Top with the smoked salmon and capers once set. 


Mini lemon meringue

Melt 50g butter in your jug, 37 degrees for about 2 minutes. Remove from jug and put a packet of Butternut Snap biscuits in. Crush on speed 7 for 5 seconds and pour butter back in.  Mix together for about 3-4 seconds. Press in to patty cases in a muffin tray. You could also just use the biscuits by themselves, just put them in patty cases and cook in the oven on 180  until hey melt slightly and take the shape of the patty case. 

The lemon curd I used in this recipe was from the book For Food's Sake and the meringue is from the EDC.  With the meringue, make it then spoon on to a tray and cook until it goes golden brown. Let it cool before handling. Simply put the lemon curd on top of your bases once they're set then place meringue on top. 


Brown Rice Patties

Cook your rinsed brown rice in the steamer basket for 22 minutes, with some pumpkin, garlic cloves and one sliced onion in the varoma.  Put the cooked veggies in the bowl on speed 4 until they're well combined. Once the rice is cooked, drain and put in the bowl with the veggies, salt and pepper to taste and a handful of rolled oats (you can add more oats if you find it isn't holding it's shape). Mix on reverse speed 1 for 20 seconds then shape into patties. Fry and serve with a salad or in the sesame seed burger buns from the blog.  I think I put parsley into these. Could have been chives. Whatever, any herbs will do!


Steamed pumpkin and lentil salad

This was delish!  Fresh figs are my favourite thing at the moment so I added them to this super easy salad.

Soak your lentils then steam them in the basket with some eggs and pumpkin in the varoma. Add it all to a plate of baby leaves. Depending on how you like your eggs, add them 8 minutes before the end of the steaming to get a perfect soft boiled egg.

Milk Bread

Delicious bread from the Thermomix app


Sesame seed bbq buns

Recipe from the recipe community.



Ingredients:
120g milk
50g water
10g fresh yeast
30g margarine
10g sugar
330g plain flour
5g salt
Sesame seeds

Preparation:
Put milk, water, yeast, margarine and sugar in the TM bowl and warm for 1 minute on Speed 2, 37°C

Mix for 4 seconds on Speed 4

Add flour and salt. Proceed for 35 seconds on Speed 5

Knead for 2 minutes.

Transfer the dough into a big bowl, cover with plastic film and let it rise for 1 hour.

Divide it into 6 pieces. Roll them nicely with your hands and press them on the top very lightly.

Brush them over with a little water. Put sesame seeds in a plate. Get each roll and press them over the sesame seeds gently so that they would stick nicely.

Place them on the baking tray (which is covered with wax paper). Let them rise again for another 1 hour.

Bake them in preheated oven (200°C) for 12-15 minutes.

Juices

We have a lot of juices here. They can be any combination really, I just use whatever I have in the fridge. In the Thermomix, fruit and veg are pulverized not juiced so there is no mess to clean up and the whole food is used. This juice is orange, mango and grapefruit and it’s so frothy and delicious, not to mention GOOD FOR YOU!


Tofu Omelette

I bought some tofu to have in a miso soup that I made, Rich asked for miso so I made some this afternoon when he got home from work. It was SO good, just like one served at a restaurant but even more fresh and delicious. I had some tofu left over so I’ve cooked it into his breakfast omelette and today I slow roasted some garlic so he will have some of those as well. Yum! 

Crack 3 eggs into Thermomix jug, add a dash of milk and salt & pepper to taste. Mix for 6 seconds on speed 6. Spray baking paper with water and place the paper in the top tray of your varoma. Pour the mix on to the baking paper, sprinkle egg with tofu and rinse out your jug, then assemble thermomix. Pour water into the jug (approx 800ml) and steam your omelette on varoma for 15 minutes. I put some sliced tomatoes in the varoma too, and added some roast garlic to the plate to serve. 




Egg and spinach slice

This slice is delicious for breakfast or afternoon tea with a small salad. It's super good for you too.

Chop 1/4 onion, 1 clove garlic and a few rashers of bacon in Thermomix for 3-4 seconds on speed 6. Add 10ml oil and sauté for 3 minutes, 100 degrees, speed 1. Add 6 eggs, half mc of milk, 1/4 teaspoon paprika, salt and pepper and mix for 8 seconds on speed 5.  Pour in to small silicone quiche dish and cook for 15 minutes in your varoma. I sprinkled the top with cheese and put it under the grill once it was done to get a crispy crust, so tasty!


Breakfast Crunch

This little gem is a great addition to any cereal, porridge or with some yoghurt (recipes for quinoa porridge and yoghurt to come soon!). I give it to Rich in a small container with a spoon and he eats it straight from the tub throughout the day. 

In thermomix, chop a handful of cashews, dates, almonds, one green apple quartered and some sultanates on turbo for 3 or 4 short bursts. It's so tasty, kids and husbands alike will love it. I sprinkled some linseeds on the top too.
